Vietnamese chicken wings
Do you enjoy gnawing on some wings every now and then? Then you definitely need to try these Vietnamese chicken wings by @bbqjunkie. They are the perfect balance of sweet, salty, sour and spicy. By marinating the wings for several hours in a flavorful mix with ingredients like fish sauce, lime and garlic, the flavors penetrate deep into the meat. The wings are then slowly cooked on the BBQ and briefly grilled over direct heat for a crispy exterior.
Serve the chicken wings with a fresh, spicy dipping sauce and some roasted peanuts, red chili and spring onion, and you’ll have a dish everyone will dive into. Perfect for a BBQ evening with friends or simply when you’re craving something incredibly tasty.

Marinating the chicken wings
Take a large mixing bowl and add the fish sauce, soy sauce, brown sugar, sunflower oil and sea salt. Press the garlic cloves into the bowl and grate in the zest of the limes. Then add the lime juice and mix everything well.
Add the chicken wings to the marinade and mix thoroughly. Transfer the wings to a sealed container or bag and let them marinate in the refrigerator for 4 hours. Once marinated, it’s time to light the BBQ. Set it up for both direct and indirect heat at around 160 degrees.
Chicken wings on the BBQ
BBQ up to temperature? Place the chicken wings on the indirect side of the BBQ. Optionally add a chunk of smoking wood and close the lid. Cook the chicken wings for 30 minutes.
Now take a small mixing bowl and add the water, vinegar, sugar, fish sauce and chili flakes. Press the garlic clove into the mixture and stir well until the sugar dissolves. Slice the red chili and spring onion into thin rings and roughly chop the roasted peanuts.
After 30 minutes of cooking, move the chicken wings to the direct side of the BBQ and grill them for 2 to 3 minutes per side.

After grilling, move the wings back to the indirect side. Let them rest there for another 5 minutes, then place them on a serving board. Serve with the dipping sauce and sprinkle the wings with roasted peanuts, red chili rings and spring onion.
Serve the Vietnamese chicken wings immediately.
