What is Poussin?
Poussin is also called spring chicken and is also known in the Netherlands as spring chicken. It is a young chicken that does not grow larger than 400 to 450 grams and is therefore used by many chefs to serve it whole. Amsterdam restaurants Lille and Goudfazant (and many others) are known for it. Fair = fair: a whole grilled chicken on your plate is of course also a treat. A Poussin is over 4 weeks old, 100% naturally fed and of course free of growth hormones and concentrates. This makes a poussin tender and light meat that can be eaten almost as a delicacy.
